Have you ever eaten a Pig Mac? You read that right – a Pig Mac. Envision a tantalizing pile of pulled pork topped by a scoop of macaroni and cheese on a Kaiser roll.

When I see this lunch special scribbled on the outside board of 531 Liberty, a café and coffee shop located in downtown Houma, a gravitational force pulls my car right in front. Lunchtime!

My guests and I enter the quaint establishment and find a table. I order the Pig Mac ($8.25) and for my side I upgrade to the Vegetable Barley Soup ($1.50 extra). The waitress informs us that the vegetables were acquired that very morning from local growers.


I encourage one of my guests to try the Baja Turkey Burger ($8.85) with promises of “going halfsies” and the other attempts the Fig and Goat Cheese Pizza ($7.45).

The soup du jour arrives first and does not disappoint. It is a souped-up version of vegetable soup – the produce, fresh; the broth and barley, nice and hearty. I taste love in each bite.

Our entrees appear promptly and as promised, sandwiches are split and traded. We start with the Pig Mac first.


The pork meat is covered with a sweet and tangy, tomato-based sauce. I tend to prefer my meat au naturel, but I enjoyed this version, especially the fun texture. I did think the flavor of the mac ‘n’ cheese gets a bit lost to the sauce, but my guest, who devours the half of sandwich in four ginormous bites, disagrees.

The second item to be ingested is the turkey burger. Also served on a Kaiser roll, this burger comes dressed with lettuce, tomato, pepper jack, avocado and chipotle mayo. The burger itself is a pre-made patty, which is a bit of a let down, but the “baja” additions make this a pretty tasty lunch.

All burgers, cold and hot sandwiches and paninis are served with your choice of chips, the side of the week or Mardi Gras Salad (a sweet veggie salad with raisins), or soup or salad for an additional charge.


The fig and goat cheese pizza, which is actually found on the appetizer menu, is a great representation of the diversity of food this little place has to offer. My other guest is also in a sharing mood and allows me to sample a piece. If you like goat cheese, you will like this pizza. Fortunately for me, I LOVE goat cheese! The earthy creaminess of the cheese is enhanced by the sweet figs and caramelized onions.

Pick a day, any day to eat here and you should not be disappointed. The lunch special changes daily, so visit 531 Liberty online to see their offerings. The hardest part may be choosing which day to go.
