It’s the same dilemma every year after you carve your fresh pumpkin-what to do with all the pumpkin guts? One of the easiest options is to separate the seeds from that slime and guts and roast them!


The simplest way to separate the seeds is to give the guts a water hath. Place the pumpkin innards into a howl of water. The seeds will float the guts will sink. A few squeezes of the guts and the seeds will pop right out. The nert step is to dry them. Spread them on a rimmed baking sheet and place in the oven at around 200 degrees far around an hour, stirring occasionally until dried.

Once seeds are dry. coat with oil and a sprinkle of salt. Roast at S25 degrees for around 25 minutes. Stir often to ensure even roasting. Once they are finished, allow them to cool completely Please note that seeds can burn quickly] Keep a careful eye on them when they are in the oven.

HONEY ROASTED SEEDS

In a small microwave safe bowl, add 1 tbsp. butter. 1 tbsp. oil or coconut oil, and 3 tbsp. honey. Microwave until the butter melts and the honey is runny. Pour the honey mixture over dry pumpkin seeds and stir. Add lisp, cinnamon and stir Again Roast for 30-40 minutes until seeds and honey are deep brown. Ton may need to stir a lot to keep the nurture from getting dumpy.

SPICY TOASTED SEEDS


In a bowl, combine 1 cup dry pumpkin seeds, 1/2 tap. garlic powder, H tsp. salt, 1/2 tap. cayenne powder. 1/2 oz. olive oil. Spread evenly on a baking sheet, roasting about 15-20 minutes.

CARAMELIZED SPICY PUMPKIN SEEDS:

In a large bowl, stir together 3 tbsp. white sugar, 1/2 tsp. cumin, 1/2 tsp. ground cinnamon. 1/2 tsp. ground ginger; and a pinch of cayenne. Set mixture aside. Spread out 1/2 cups dry pumpkin seeds on a baking sheet and spray with cooking spray and sprinkle with salt. Bake seeds until golden, about 20-25 minutes. Heat 1 tbsp. alive oil in a skillet and stir in toasted seeds and 2 tbsp. sugar. Cook seeds until the sugar forms a coating on the seeds, about 2-3 minutes. Stir the caramelized seeds into the sugar-spice mixture to coat.


These delicious nibbles are high in omega’s and omega-6 fatty adds, antioxidants and fiber, so enjoy without the guilt!
